I'm new to Sartopo/Caltopo, and I'm wondering how to find a legend for the maps with the online interface. Or if I could add a generic legend with trail types, that would also be great.

It varies depending on the layer selected. For the USGS layer, see https://pubs.usgs.gov/gip/TopographicMapSymbols/topomapsymbols.pdf. For MapBuilder Topo, trails are red and roads are black, with unimproved roads as dashed black lines. MapBuilder Overlay uses a slightly different style so that it's easier to read on top of aerial imagery, but it still follows USGS conventions, e.g. red for more major roads and white for less-major roads.
